ISHIZUCHI Brewery Located at the foot of Mount Ishizuchi, the highest peak in Western Japan, and named after the mountain, this brewery is built on the love and passion of the family. It uses water flowing from the Ishizuchi Mountain system as brewing water. In the brewing process, we use unique box koji and natural yeast cultivated in-house, supplemented by low-temperature fermentation operations of 5-12 degrees Celsius. The sake brewed has won many awards in Japanese and national sake evaluation competitions, making it a famous sake brewery famous throughout Japan! Recommended sake: Ishizui Shinsei Daiginjo 720ML Premium Yamada Nishiki rice produced in Yoshikawa, Hyogo Prefecture, is polished to 35%. It is brewed by hand throughout the entire process, fermented at low temperature, and unfiltered Daiginjo raw wine is collected in a bag crane. It has a gorgeous aroma like pear and cantaloupe, a very transparent and clean wine texture, and an elegant and smooth taste. He has won many awards at the Japan New Sake National Appraisal Conference and the International Sake Appraisal Competition.
